Aloo Methi




















Aloo Methi 

Ingredients

1 tablespoon oil

1 onion, finely sliced

½ teaspoon red chilli powder

¼ teaspoon turmeric powder

1 bunch methi leaves / fenugreek leaves (1 bunch big or 3 – 4 bunches small size leaves, wash and clean leaves well, drain out water thoroughly)

2 potatoes, cut into cubes and boil separately

½ teaspoon salt

Method

Heat oil in a pan. Add sliced onions and fry till golden color.

Reduce the heat to low and gently stir well red chilli powder and turmeric powder until the raw smell goes.

Add drained methi leaves and cook on a low heat for 5 minutes until done / well cooked (quantity of methi leaves will reduce to half ). Do not add water when cooking.

At this stage, add separately boiled potatoes and salt to taste. Mix all the ingredients well. Cover with a lid and cook on a low heat for another 5 – 7 minutes until done / all the ingredients well combined. Serve as a side dish with rotis ..
