Aloo Ki Subzi with Kasoori Methi (Dried fenugreek leaves)

A tasty side dish, goes well with Rotis / Rice !!!

Serves: 2

Ingredients

Oil - 1 tablespoon
Onion - 1, chopped or 2 tablespoons
Garlic - 6 cloves, chopped
Red chilli powder - 1 teaspoon
Turmeric powder - 1/4 teaspoon
Tomatoes -1, chopped or 1/2 teaspoon thick tamarind paste
Potatoes - 225 g (3, medium size), cubed
Kasoori methi (dried fenugreek leaves) - 2 tablespoons
Salt - 1/2 teaspoon (or to taste)
Water - 1 tablespoon
Jeera powder (cumin seed powder) - 2 pinches
Pepper powder - 2 pinches
Chopped coriander leaves - 2 teaspoons

Method

Separately boil potato cubes and keep aside.

Heat a small pan. Add kasoori methi and dry roast for 3 - 5 minutes until crisp. Remove from the heat and crush it into a fine powder.

Heat oil in a wide pan. Fry chopped onion and garlic on a medium heat till golden color and crisp..

Add red chilli powder and turmeric powder. Stir well for 2 - 3 minutes.

Add boiled potatoes and stir well.

Add crushed kasoori methi powder and chopped tomatoes / tamarind paste. Saute for 2 - 3 minutes.

Add salt to taste. Mix all the ingredients well. Sprinkle 1 tablespoon water.

Cover with a lid and cook on a low heat for 10 minutes or till done and water almost dries up.

Sprinkle jeera powder and pepper powder. Decorate with chopped coriander leaves. Serve as a side dish with Rotis or Rice.
