Egg Fried Rice

Egg Fried Rice

A delicious fried rice, goes with any Chinese gravy dishes !!!

Serves: 2 - 3


For the  Egg:

3 eggs, beat well

1 tablespoon oil

1/4 teaspoon salt

For Fried Rice:

2 cups ( 400 ml ) cooked and cooled rice ( rice should not be overcooked )

1 tablespoon oil

1 onion, finely chopped or 1 bunch spring onion, finely chopped

6 cloves garlic, finely chopped

1 small green chilli, very finely chopped

2 tablespoon, finely chopped carrot (or any other vegetables)

1 - 2 teaspoon soy sauce (Optional)

1/2 teaspoon salt ( or to taste )

1/2 teaspoon pepper powder


For Egg:

Heat oil in a wok / frying pan. Reduce heat to medium, add beaten egg mixture and salt. Stir fry till egg are well cooked and leaves from the side of the pan. Do not cover the pan during cooking.

For Fried Rice:

In another pan / wok, heat oil. Add chopped onions / spring onions, garlic, green chilli, chopped carrot, garlic and fry until crisp and fragrant.

Add cooked and cooled rice, stir - fried egg mixture, soy sauce (optional), pepper powder and salt to taste. Mix well. Do not cover with lid. Stir continuously and fry for 5 minutes on a low heat until rice well combined with egg, salt and pepper. Serve with any gravy dishes of your choice.
