Mulaku Bajji


Mulaku Bajji (no added food color and cooking soda)

A very popular deep fried Indian snack !!

Makes: 6 mulak bajjis

Ingredients

For bajji batter (gram flour batter):

1/2 cup / 100 g (Indian standardmeasuring cup of 100 ml / 4 oz capacity) besan ( gram flour/ chonepitti )

60 – 80 ml water (depending upon the quality of the gram flour (besan)

1/2 teaspoon red chilli powder

1/4 teaspoon turmeric powder

1/2 teaspoon salt ( or to taste )

2 pinches hing ( asafoetida )

Mix all the ingredients with water and keep aside for 15 minutes. Bajji batter should be of dropping consistency (just like bajji batter).

For bajji mulak:

6 bajji mulak

6 – 8 teaspoon tomato ketchup(or grated paneer / cheese)

200 ml oil (to deep fry)

Wash bajji mulak carefully. Drain out water and wipe each bajji mulak with a soft kitchen towel. Make a slit lengthwise (see the photo below) and carefully fill 1 1 /2 teaspoon tomato ketchup / grated paneer or cheese inside.

Heat oil in a pan / kadai on a medium heat. Dip each mulak in bajji batter and deep fry till golden color on both the sides. Drain and place on kitchen towel to absorb extra oil. Serve with tea / coffee as a snack.
